Step 1: Prepare the Green Tomatoes

Start by washing your green tomatoes thoroughly. Green tomatoes have a firm texture, making them perfect for salsa. After washing, chop the tomatoes into small, even pieces. You can leave the skins on, as they will soften during the cooking process and add texture to the salsa.

Step 2: Combine Ingredients

In a large pot, combine the chopped green tomatoes, onions, garlic, and jalapeños. Add the lime juice, cumin, salt, and pepper. Stir everything together to evenly distribute the ingredients.

Step 3: Cook the Salsa

Place the pot over medium heat and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 20-30 minutes, stirring occasionally. The tomatoes will soften and release their juices, and the flavors will meld together beautifully.

Step 4: Blend to Desired Consistency

Once your salsa has simmered and the ingredients are tender, you can decide on the consistency. For a chunkier salsa, use a potato masher to break down the mixture slightly. If you prefer a smoother texture, use an immersion blender or transfer the mixture to a regular blender and pulse until you reach the desired consistency.

Step 5: Taste and Adjust Seasonings

Before canning, taste your salsa verde. This is the time to adjust the seasoning. If it’s too tart, add a little sugar. If you want more heat, consider adding another chopped jalapeño or a pinch of cayenne pepper. You can also adjust the salt or lime juice to your liking.

Step 6: Prepare for Canning

If you’re planning to can your salsa verde, it’s essential to follow proper canning procedures to ensure food safety. Start by sterilizing your canning jars and lids in boiling water for at least 10 minutes. Keep the jars hot until you’re ready to fill them.

Step 7: Fill the Jars

Carefully ladle the hot salsa verde into the sterilized jars, leaving about ½ inch of headspace at the top. Use a clean, damp cloth to wipe the rims of the jars, ensuring there are no food particles that could interfere with the sealing process. Place the sterilized lids on top and screw on the bands until fingertip-tight.

Step 8: Process the Jars

Process the filled jars in a boiling water bath. Make sure the jars are fully submerged in water and have at least an inch of water covering them. Boil the jars for 15 minutes (adjusting for altitude if necessary). After processing, carefully remove the jars and place them on a towel to cool. As they cool, you should hear the lids pop, indicating a proper seal.

Step 9: Check the Seals and Store

Once the jars are completely cool, check the seals by pressing down on the center of the lids. If the lid doesn’t flex, the jar is sealed properly. Store your canned salsa verde in a cool, dark place. If any jars didn’t seal correctly, refrigerate and use them within a week.
